Melissa Fuster is a food policy and public health nutrition scholar interested in the sociopolitical factors shaping eating practices. Dr. Fuster has a doctoral degree in Food Policy and Applied Nutrition at Tufts University Friedman School of Nutrition Science and Policy. Her doctoral research examined healthy eating perceptions among food insecure Salvadoran communities. Prior to joining CUNY, Dr. Fuster was a post-doctoral fellow in Food Studies at New York University, where she investigated the sociocultural and historical influences on culinary and nutritional outcomes in the Hispanic Caribbean region and its diaspora communities, through ethnographic and archival research. She has continued this work at Brooklyn College, expanding it to examine the role of culinary and nutrition experts, forming the basis of her first book (under contract, University of North Carolina Press), and her NIH/NHLBI K01 research, to engage Latino restaurants in the design of a community-based intervention to improve restaurant nutrition environments.
